PREPARING THE DOUGH

In a large bowl, mix the sifted flour with the powdered sugar and salt. Add the cold butter, cut into small cubes, and quickly knead with your fingertips until you get a sandy texture. Gradually add 1-2 tablespoons of very cold water, mixing with a fork until the dough becomes homogeneous and smooth. Work quickly so that the butter does not melt, thus ensuring a tender dough.

Wrap the dough in cling film and leave it in the refrigerator for at least 2 hours.
PREPARING THE FILLING

Grind the cloves and star anise in a mortar until they become powder. Mix the obtained spices with the plum jam until homogeneous.
