
Roasted Cauliflower with Tahini Sauce and Za'atar

Preparing and Roasting the Cauliflower
Preheat the oven to 180°C (top and bottom heat). Clean the cauliflower of its outer leaves and trim the stem slightly so it stands upright. Place the cauliflower in a baking tray lined with baking paper.
Brush the cauliflower with olive oil, sprinkle with Za'atar seasoning and salt. Pour approximately 100 ml of water into the tray, cover everything with aluminum foil and bake for 30-35 minutes. Remove the foil, brush again with a little olive oil and bake uncovered for another 5 minutes for a crispy texture.
Preparing the Sauce and Serving
For the tahini sauce: mix the tahini paste with lemon juice, 4 tablespoons of water, 2 tablespoons of olive oil, crushed garlic, and a pinch of salt until you get a creamy consistency.
Chef's tip
If the tahini sauce is too thick, add a teaspoon of water at a time until you reach the desired consistency.
You can use purple or orange cauliflower for a special visual appeal; the taste is similar to white cauliflower.
