- 2 mackerel fillets (approx. 200 g)
- 2 tablespoons whole grain mustard
- 2 tablespoons extra virgin olive oil
- 1 red chili pepper
- 2 sprigs fresh lemon thyme
- 8 fresh sage leaves
- 1 handful fresh green parsley
- 2 tablespoons lime juice
- freshly ground black pepper to taste
- iodized table salt to taste

- 400 g boiling potatoes

In a small bowl, mix the olive oil with the grain mustard and lime juice. Finely chop the aromatic herbs (thyme, sage, parsley) and the chili pepper, then add them to the bowl. Season with salt and pepper to taste. Brush the mackerel fillets (previously washed and dried) with this mixture, gently massaging the flesh.

Heat a pan over medium heat and place the fish, starting with the skin side down. Cook for 2 minutes, then flip the fillets and cook for another 2 minutes on the other side (time may vary depending on the thickness of the fillet). Serve immediately with boiled or mashed potatoes.
