Preparing the Avocado Base

Peel and pit the avocados, then place the flesh in a tall container. Blend with an immersion blender until you get a fine and homogeneous paste.

Flavoring and Finishing

Peel the red onion, chop it very finely, and add it to the avocado mixture. Peel the garlic and press it directly into the container.

Add 1-2 tablespoons of lemon juice (to taste) and the finely chopped aromatic herbs (basil and parsley). Mix everything well.

Chef's tip

To prevent oxidation (browning) of the paste, make sure to use enough lemon juice and keep the avocado pit in the bowl until serving.

If you want a richer texture, you can add a tablespoon of quality mayonnaise or Greek yogurt while blending.
