Preparation method
Preparing the Rice
Rinse the rice thoroughly in several changes of water until the water runs clear. Place it in cold water, bring to a boil, and simmer for about 10 minutes.
After boiling, remove the rice from the heat, cover it with a lid, and let it rest. Meanwhile, prepare the rice mixture from rice vinegar, sugar, and a pinch of salt. Gently mix this sauce with the cooked rice and let it cool completely.
Assembling the Sushi Sandwich
Place a sheet of nori seaweed on a piece of plastic wrap, shiny side down. In the center of the sheet, place a portion of rice, then add the remaining ingredients: cucumber slices, marinated tofu, and pickled red cabbage. Add a sauce made from soy mayonnaise, sriracha, and a few drops of sesame oil. Cover everything with another layer of rice. You can adapt the filling to your preferences, using other ingredients such as fish or meat.
Chef's tip
For a perfect cut, use a very sharp knife lightly moistened with water. The sandwich should be cut in half just before serving.
