Ingredients overview
- 300 g fine rolled oats
- 70 g liquid honey
- 50 g unsalted butter 82% fat
- 1 tablespoon vanilla extract
- 50 g smooth peanut butter
- 70 g unsweetened dried cranberries
- 1 pinch iodized table salt
First, preheat the oven to 180 °C and line a small baking tray (approximately 25 cm × 30 cm) with baking paper.
In a large bowl, mix the rolled oats, honey, melted butter, vanilla extract, peanut butter, cranberries, and a pinch of salt. Press the resulting mixture firmly into the tray, first with your palm and then with the bottom of a glass, to remove air bubbles and prevent the bars from breaking when cut. Bake for 20–25 minutes at 170–180 °C.
After baking, remove the tray from the oven and let the mixture cool completely for at least 35 minutes before cutting it into bars (it is best cut with a serrated bread knife).
Chef's tip
For a crispier texture, you can also add some crushed nuts or seeds to the mixture.
