- 500 g of plain Greek yogurt
- 300 g of long cucumber
- 30 g of fresh mint
- 20 g of fresh chives
- 16 g of lemon juice
- 16 g of extra virgin olive oil
- 7 g of fresh garlic
- 1 pinch of table salt
- 1 pinch of ground black pepper

Peel the cucumber and grate it. Place the grated cucumber in a colander set over a bowl. Add a little salt on top and let it drain for about 2 hours to remove excess water.

In a large bowl, mix the Greek yogurt with olive oil, lemon juice, crushed garlic, finely chopped mint, and finely chopped chives. Season lightly with salt and pepper to taste.

Finally, add the well-drained cucumber and mix everything carefully. Before serving, let the sauce chill in the refrigerator to allow the flavors to meld.
Chef's tip
For an even creamier result, you can drain the yogurt in a cheesecloth for an hour before using it.
