Preheat the oven to 180 degrees Celsius.

Slice the baguette into thin pieces. Cut the pancetta into small cubes and fry it in a pan until crispy. Grate the Cheddar cheese finely and mix it with the beaten eggs, mustard, and half of the fried pancetta.

Add the finely chopped parsley and season with freshly ground black pepper. Spread the mixture onto the baguette slices and sprinkle the remaining pancetta on top.
Chef's tip
For extra flavor, you can rub the baguette slices with a garlic clove before adding the cheese mixture.
