Preheat the grill to medium-high heat. If you don't have an outdoor grill, you can use a cast iron pan or a grill pan on the stove.
Cut the Provolone cheese into thick slices, approximately 1.5 - 2 cm. It is important for the slices to be thick to maintain their shape during cooking and not melt completely immediately.
Brush both sides of each cheese slice with extra virgin olive oil. This will prevent sticking and help achieve a beautiful golden crust. Sprinkle the slices with dried oregano, chili flakes, and freshly ground black pepper.
Chef's tip
For an extra burst of flavor, you can also add a few fresh basil leaves at the end.
If the cheese is too soft, place it in the freezer for 10-15 minutes before grilling to help it maintain its shape better.
