Salata libaneză de fasole verde (Loubieh bi Zeit) este o capodoperă a bucătăriei din Orientul Mijlociu. Păstăile fragede de fasole verde sunt înăbușite lent în ulei de măsline extra virgin cu roșii dulci, usturoi și chimion parfumat, apoi servite la temperatura camerei cu lipii rumenite și zeamă proaspătă de lămâie. Un prânz complet, bogat în proteine vegetale și fibre, plin de prospețime.

Vegetable preparation
Peel and finely chop the yellow onion, and thinly slice the garlic cloves. Wash the green beans and snap off the ends if needed; if using frozen beans, let them thaw and drain them well.
Simmering
In a large saucepan or deep skillet, heat the extra virgin olive oil over medium heat. Add the chopped onion and sauté for 4-5 minutes until translucent and golden. Add the sliced garlic and ground cumin, sautéing for another minute to release their aromas.
Add the green beans to the pan and toss well to coat them in the flavored oil. Sauté the beans for 5 minutes.
Chef's tip
Loubieh bi Zeit is even tastier the next day! Store it in the refrigerator in an airtight container for 3-4 days; serve cold or at room temperature.
For an authentic crunchy touch, you can top with pine nuts lightly toasted in a dry pan.
