- 1 ripe pineapple
- 200 ml orange juice
- 50 ml Metaxa
- 2 tablespoons white granulated sugar
- 1 cinnamon stick
- 2 tablespoons brown cane sugar

Preparing the Pineapple

Peel the pineapple and cut it into slices of equal thickness. Remove the hard core of the pineapple using a round cutter or a small knife. Roll the pineapple slices in brown sugar and grill them on both sides until beautifully caramelized.
Flambéing and Finishing

In a pan, let the granulated sugar caramelize lightly. Add the orange juice and cinnamon stick, stirring until the sugar is completely dissolved. Add the grilled pineapple and simmer the liquid until it reduces to one-third of its volume. Pour Metaxa over it and flambé carefully.
Chef's tip
Serve immediately with a generous scoop of vanilla ice cream for a perfect contrast between warm and cold.
