Preparing the skewers and sauce
Cut the boneless chicken thighs into bite-sized cubes suitable for skewers (about 2-3 cm) and season them with a pinch of ground black pepper. Wash the green onions and cut them into equal segments matching the length of the chicken pieces (about 3 cm).
In a small bowl, mix the Gochujang paste, soy sauce, wildflower honey, finely crushed garlic, grated ginger, and sesame oil until you get a smooth and glossy glaze.
Thread the chicken pieces onto skewers (if using wooden skewers, soak them in water for 20 minutes beforehand), alternating with the green onion segments, using about 4-5 pieces of meat per skewer.
Chef's tip
For an even more authentic smoky flavor, Dakkochi skewers can be cooked directly on an outdoor charcoal grill.
If you prefer a milder level of heat, you can reduce the amount of Gochujang paste and add an extra teaspoon of honey.
