Remove the shrimp heads and squeeze their juice into a small bowl (save it for later). Peel the shrimp, leaving only the last section of the tail.

In another bowl, mix the peeled shrimp with lemon and orange juice. Add two pinches of salt, mix well, and let them marinate for 10 minutes.
Cooking in a Pan or Grill

Heat olive oil in a pan over medium heat. Add the shrimp and sauté for 30 seconds on one side.
Chef's tip
For a more intense flavor, you can marinate the shrimp for up to 20 minutes, but no longer, as the acid from the citrus will start to 'cook' the meat.
