Preparation method

Preheat the oven to 180–185 °C and prepare a 6-cavity silicone muffin tin. If not using silicone, lightly grease the tin with a little oil.

Cut the tomatoes in half, remove the seeds, and dice the remaining pulp into small cubes. Crumble the telemea cheese finely.

In a large bowl, mix the eggs with the diced tomatoes, crumbled telemea cheese, oregano, basil, salt, and pepper. Whisk everything well until smooth.
Chef's tip
For added texture, you can also add a few finely chopped fresh spinach leaves or a little red bell pepper to the mixture.
