Preparing the lentils and vegetables
Rinse the lentils under cold running water. Peel the carrots and slice them thinly into rounds. Finely chop the yellow onion, garlic, and fresh ginger.
In a large pot, place the rinsed lentils, carrots, and 800 ml of water. Add half a teaspoon of turmeric and a pinch of salt. Bring to a boil over medium heat and simmer for 15-20 minutes, until the lentils and carrots are tender.
Sautéing the aromatics (Tadka)
In a deep skillet, heat 2 tablespoons of sunflower oil over medium heat. Add the ground cumin, garlic, ginger, and chopped onion. Sauté for 3-4 minutes, until the onion becomes golden and translucent.
Chef's tip
For an even more authentic South Indian flavor, you can add a sprig of fresh curry leaves or a teaspoon of black mustard seeds while sautéing.
Sambar is even tastier the next day, as the lentils absorb the full blend of spices perfectly.
