Dal Dhokli este o mâncare tradițională indiană reconfortantă: un curry aromat de linte în care sunt fierte găluște fragede din aluat de grâu condimentat.

Preparing the lentils and the aromatic base
Rinse the lentils well under cold running water, then place them in a large pot with 1 liter of water, half of the ground turmeric, and a pinch of sea salt. Let it boil over medium heat for about 20-25 minutes, until the lentils are very soft.
In a deep pan, heat the clarified butter (ghee). Add the ground cumin, crushed garlic, and freshly grated ginger, sautéing for 1 minute until fragrant. Stir in the tomato passata and the remaining turmeric, letting the sauce simmer over low heat for 5 minutes.
Pour the aromatic mixture over the cooked lentils and whisk vigorously with a whisk or vegetable masher to achieve a smooth and velvety texture. If the soup is too thick, add another 200 ml of warm water.
Chef's tip
Traditionally in Gujarati cuisine, a teaspoon of unrefined brown sugar is often added to the dal to achieve the classic sweet-and-sour contrast between the lemon and spices.
Add the dough pieces gradually into the pot while the sauce is simmering gently; if you add them all at once, they risk sticking together.
