Machete mexican este una dintre cele mai spectaculoase specialități de street food din Ciudad de México: o lipie generoasă rumenită și crocantă pe plită, umplută cu carne tocată de vită suculentă, piure fin de fasole neagră aromată și brânză Cheddar topită din plin. Se servește fierbinte, feliată, alături de smântână răcoritoare, coriandru proaspăt și lime.

Preparing the filling
Finely chop the yellow onion and crush the garlic cloves. Heat half of the sunflower oil (15 ml) in a large pan over medium heat. Add the ground beef, onion, and half of the crushed garlic. Brown the meat for 6-8 minutes, breaking it apart with a spatula, until it has completely changed color.
Season the beef with smoked paprika, half of the ground cumin, fine table salt, and ground black pepper. Mix well and cook for another 2 minutes to release the flavors, then transfer the meat to a bowl.
In the same pan, add the remaining sunflower oil (15 ml) and the rest of the crushed garlic. Add the black beans (lightly drained) and the remaining ground cumin. Sauté over medium heat for 3-4 minutes, then mash the beans with a fork or potato masher until you get a thick, flavorful paste (refritos). Season with salt to taste.
Chef's tip
For an even crispier crust, you can brush the outside of the tortilla with a very thin layer of oil before placing it on the pan.
If you want an authentic, spicier street food kick, add a few chili flakes or thin slices of jalapeño pepper to the bean or meat mixture.
