Start by preparing the garlic and ginger paste. In a blender or mortar, place 3 cloves of garlic, 5 cm of peeled ginger, 1 tablespoon of oil, and a pinch of salt. Blend everything until you get a homogeneous paste. This paste can be stored in the refrigerator in a sealed jar for several weeks.

Cut the cauliflower into florets of approximately 3-4 cm and the potatoes into quarters (wedges).

Heat water in a deep pot and place a steaming basket on top. Steam the cauliflower and potatoes together with salt and turmeric until slightly softened.

Chef's tip

For an authentic experience, serve the cauliflower with fresh lemon slices and pickled red onion. If you prefer a spicier taste, you can add a little freshly chopped chili pepper on top.
