In a large bowl, sift the buckwheat flour and spelt flour. Add the eggs, milk, and a pinch of salt, then mix everything well until smooth. Let the obtained batter rest for 10 minutes.
Meanwhile, prepare the apple filling: wash the apples, core them, and cut them into small cubes. In a non-stick pan, melt the 2 tablespoons of butter, add the chopped apples, and sauté them for 5 minutes over medium heat. Turn off the heat, add the honey and cinnamon to the pan, and mix well.
Prepare another non-stick pan, heat it without fat, and prepare the rested batter. Cook the crepes one by one, over medium heat, for approximately 1 minute on each side. The batter should be enough for about 10 crepes.
Chef's tip
For an even finer texture, you can let the batter rest in the refrigerator for 30 minutes. Serve the crepes warm, perhaps with a spoonful of Greek yogurt on top for a delicious contrast.
