Preheat the oven to 200-205 °C. Prepare a baking tray (minimum 30x30 cm) and line it with baking paper.

Prepare the salmon fillets: wash them, pat them dry, then brush them with rapeseed or sunflower oil. Season with salt and pepper, drizzle honey over them, and place them on the tray. Bake for 10-11 minutes, depending on the thickness of the fillets.

Meanwhile, prepare the sauce: peel the garlic and place it in a tall container for blending. Add the fresh parsley, dill, lemon zest and juice, salt, pepper, olive oil, dried oregano, and 50 ml of water. Blend everything with an immersion blender until smooth. Leave the sauce at room temperature.

Chef's tip

For extra flavor, you can serve the salmon with boiled new potatoes with butter or a crispy green salad.
