- 100 g of fine oats
- 2 teaspoons of chia seeds
- 1 teaspoon of vanilla extract
- 200 ml of skimmed milk
- 100 g of bananas
- 1 tablespoon of liquid honey
- 250 ml of still water
In a medium-sized saucepan, add the oats, chia seeds, vanilla extract, milk, and water. Cook the mixture over medium heat for 9–10 minutes, stirring occasionally. When the oatmeal has thickened, turn off the heat, cover the saucepan with a lid, and let it rest for 2–3 minutes.
Meanwhile, heat a non-stick pan over medium heat. Peel the banana, cut it lengthwise, then in half, so you get 4 pieces. Place the banana pieces in the pan, drizzle with honey, and fry for 1–2 minutes on each side until golden brown and caramelized.
Divide the oatmeal into two bowls and serve each portion with the caramelized banana pieces on top.
Chef's tip
Instead of a pan, you can prepare the caramelized banana in the oven. Bake it at 215–220 °C for 8–9 minutes.
