Grease the loaf pan with a little oil and line it with shredded coconut. Preheat the oven to 175°C.

In a bowl, mix the flour with the coconut, almonds (coarsely chopped), and baking powder. Separate the eggs into whites and yolks.

Beat the egg whites with a pinch of salt until stiff peaks form. Gradually add the granulated sugar, spoon by spoon, continuing to beat. Then incorporate the egg yolks, one by one.
Chef's tip
For an even more intense flavor, you can lightly toast the coconut in a dry pan before adding it to the batter.
