Preparing the Dough and Filling

Preheat the oven to 170 °C and line a baking pan (approximately 15 cm × 20 cm) with parchment paper.

In a bowl, mix the spelt flour (300 g), egg, honey, yogurt, and baking powder until you get a homogeneous dough. Spread two-thirds of this dough into the prepared pan.

In another bowl, mix the frozen blueberries with lemon juice, cornstarch, and brown sugar. Spread this mixture evenly over the dough layer in the pan.

Chef's tip

For a more intense flavor, you can add a little organic lemon zest to the dough.
