
Salmon with Sweet Potatoes and Broccoli

Preparation method
Start by preheating the oven to 180–185 °C. Prepare a baking tray of approximately 20 cm × 30 cm and line it with baking paper.
Peel the sweet potatoes and cut them into thin slices. Break the broccoli into small florets and cut half of the lemon into thin slices. In a small saucepan, melt the butter over low heat (this will take 1–2 minutes).
In the prepared tray, arrange the sweet potato and lemon slices, and the broccoli florets. Sprinkle with salt, pepper, chili powder, and pour the melted butter, then mix everything well. Place the salmon fillets on top of the vegetable mixture, seasoning them also with salt and pepper. Place the tray in the oven and bake for 20–25 minutes at 180–185 °C.
Chef's tip
You can cut the other half of the lemon into slices and serve it alongside the salmon – this way, everyone can season their fish with fresh lemon juice to taste.
