Preparation method

Preheat the oven to 180–185 °C and prepare a silicone muffin tin for 12 servings. If not using silicone, lightly grease the molds with a little oil.

Wash the broccoli and cut it into very small florets. Wash the bell pepper, remove the seeds, and cut it into small cubes. Peel the garlic and grate it finely or crush it.

In a large bowl, mix the broccoli, bell pepper, garlic, 2 tablespoons of olive oil, and the 6 eggs. Season with salt and pepper to taste. Whisk the mixture well with a whisk.

Chef's tip

You can also add some crumbled feta cheese or grated Parmesan to the mixture for extra flavor.

The muffins keep well in the refrigerator in an airtight container for 2-3 days and can be quickly reheated in the microwave.
