Wash all the vegetables well. Break the cauliflower into small florets. Cut the tomatoes and bell pepper into larger pieces, and finely chop the onion. If using chili pepper, cut it in half, remove the seeds, and chop it finely. Squeeze the juice from the lime and keep it for the end.

Cooking the dish

Cook the basmati rice according to the package instructions until it becomes fluffy.

In a large pan or a wok, heat 2 tablespoons of olive oil. Add the diced chicken breast and fry it on all sides until golden. Add the onion and sauté for 2 minutes over medium heat.

Chef's tip

For extra freshness, sprinkle freshly chopped coriander on top before serving.

If you prefer a thinner sauce, you can add a little water or vegetable broth during cooking.
