Preparing the Base

Start by pouring 50 ml of water into a small bowl, add the powdered gelatin, and let it hydrate (swell) for a few minutes.

Meanwhile, peel the two mangoes and remove the pits. Place the peeled pulp in a blender, add 100 ml of water, and blend until you get a fine and homogeneous mixture.

Pour the mango mixture into a larger pot, add the coconut milk and honey. Mix well and bring the mixture to a boil over medium heat.

Chef's tip

For an even finer texture, you can pass the mango puree through a fine sieve before boiling it. If you want a vegan dessert, you can replace honey with agave syrup.
