Preparation method
Preheat the oven to 170 °C and line a baking tray with baking paper.
In a large bowl, combine the cream cheese, egg, butter, and brown sugar. Mix everything with an electric mixer until smooth. Add the grated zest and lemon juice and stir. Then, add the spelt flour, cornstarch, baking soda, and a pinch of salt. Mix until you get a homogeneous dough. Finally, carefully fold in the frozen blueberries.
From the prepared dough, form 20 equally sized balls on the prepared tray, gently pressing them down with your fingers. Place the tray in the oven and bake for 10–15 minutes at 170–175 °C, until the cookies are lightly golden.
