Preparation method

First, preheat the oven to 180 °C. Prepare a baking tray and line it with baking paper.

In a large bowl, combine the spelt flour, brown sugar, butter, baking powder, egg, nutmeg, and a pinch of salt. Knead everything until you get a homogeneous dough. Transfer the dough to the prepared tray, form a low loaf, about 1.5 cm high, and bake for 25 minutes at 175–180 °C.

Remove the tray from the oven and diagonally slice the loaf, using a bread knife, into slices about 1 cm thick. Place the individual slices on the tray and bake them for 5 minutes at 175–180 °C. Then, remove the tray, turn the slices to the other side, and bake for another 5 minutes at the same temperature.

Chef's tip

You can drizzle the finished biscotti with a little melted chocolate for an extra treat.
