Preparing the ingredients
Wash the pork meat, pat it dry with a paper towel, and cut it into medium bite-sized cubes of about 3-4 cm. Peel and finely chop the onions, dice the bell pepper, and finely crush the garlic cloves.
Browning and slow cooking
Heat the sunflower oil in a deep pan or cast-iron pot. Add the pork neck cubes and brown them over medium to high heat on all sides until they get a delicious golden crust (about 8-10 minutes).
Add the chopped onion and bell pepper over the meat. Sauté everything over low heat for 5 minutes, stirring occasionally, until the vegetables soften and become translucent.
Chef's tip
For an even richer flavor, you can add a crushed garlic clove right at the end of cooking, 2 minutes before turning off the heat.
If the sauce is too thick, add a little more warm water; if it is too runny, let the stew simmer uncovered for the last 10 minutes.
