Preparing the juicy filling

Finely chop the yellow onion and red bell pepper, and finely crush the garlic cloves. Heat the 2 tablespoons of olive oil in a large skillet and sauté the vegetables for 4-5 minutes until soft and translucent.

Add the minced beef to the skillet and cook over medium heat, breaking it up with a spatula, for 6-8 minutes until browned. Stir in the ground cumin, smoked paprika, salt, and ground black pepper. Mix well and let the mixture cool completely before assembling.

Shaping and baking the empanadas

Preheat the oven to 200°C and line a large baking sheet with parchment paper. Roll out the shortcrust pastry on a flat surface and cut out round discs with a diameter of about 10-12 cm.

Chef's tip

Let the meat filling cool before placing it on the dough so that the pastry doesn't get soggy and stays extra crispy when baked.

You can prepare the empanadas in advance and freeze them before baking. When ready to enjoy, bake them straight from the freezer, adding 5 minutes to the cooking time.
