In a large bowl or on a clean work surface, mix the spelt flour, olive oil, buttermilk, poppy seeds, baking powder, and salt. Knead well with your hands until you get an elastic and homogeneous dough.

Wrap the dough in cling film and let it rest in the refrigerator for 30 minutes. This step will make the dough easier to roll out.
Baking

Preheat the oven to 180°C. Roll out the dough on a lightly floured surface until it reaches a thickness of approximately 2 mm. Use only as much flour as necessary to prevent the dough from sticking.
Chef's tip
For extra flavor, you can add a little dried rosemary or grated Parmesan cheese to the dough.
