Roughly chop the figs and boil them in 120 ml of water for 5 minutes, until they soften. Add the sugar, lemon juice, and honey, then boil for another 1 minute. Let the mixture cool partially and blend everything with a blender until you get a smooth paste.

Preheat the oven to 200 °C.

Divide the dough into two equal parts and roll out each part on a lightly floured surface until you get a sheet about 2 mm thick. Brush both sheets with egg yolk.

Chef's tip

If fresh figs are not in season, you can use dried figs, but soak them in warm water before boiling them.
