In the bowl of a food processor, first pour 370 ml of very cold water (almost freezing). Add the flour and balsamic cream, then mix on low speed for 3 minutes.

Add the crumbled fresh yeast and mix on high speed for 7 minutes. You will get a sticky and wet dough.

Add the salt and 15 ml of extra virgin olive oil, then continue mixing on high speed for another 3 minutes. The dough will remain sticky but will start to pull away from the sides of the bowl.
Chef's tip
The water used must be truly ice-cold. You can leave it in the refrigerator overnight or add ice cubes to it, waiting for it to cool thoroughly before straining and measuring it.
