Preparation method

STARTER PREPARATION

Dissolve 10 g of fresh yeast in 30 ml of lukewarm water.

In the bowl of a food processor, add 350 g of flour and, while mixing at medium speed, gradually pour in the yeast mixture and another 150 ml of lukewarm water. Knead for 5 minutes until you obtain a smooth and elastic dough.

Grease a bowl with 20 ml of olive oil and place the dough in it. Cover the bowl with cling film and let it rise in a warm place for 12–15 hours or overnight.

Chef's tip

For an even crispier crust, you can place a bowl of hot water in the oven during the first 10 minutes of baking. The steam will help create that artisan texture you're looking for!
