Dough Preparation and Proofing
One hour before preparation, take all ingredients out onto the countertop to reach room temperature. This will help the dough rise evenly.
Sift the flour into a large bowl. Make a well in the middle and pour in the lukewarm milk (not hot, maximum 40°C). Add the sugar and crumble the fresh yeast. Mix in a little flour from the edges until you get a thick mixture. Cover the bowl with a towel and let the starter rise for 15 minutes.
Meanwhile, peel the carrot and grate it on a fine grater. The carrot will give the buns an extremely tender texture and a beautiful color.
Chef's tip
For wider buns, suitable for large burgers, gently press the dough balls after placing them on the tray to flatten them slightly before the second proofing.
