Dough preparation
Separate the egg into yolk and white. Keep the egg white aside for later.
In a small bowl, crumble the fresh yeast, add the lukewarm milk, and mix well until the yeast is completely dissolved. Caution: the milk should not be hot, otherwise the yeast will lose its properties.
In a large bowl or the bowl of a food processor, mix both types of flour (wheat and buckwheat), salt, and ground black pepper. Add the egg yolk and the milk-yeast mixture. Knead at medium speed for about 5 minutes, until you obtain a smooth and homogeneous dough. Cover the bowl with a clean towel and let it rise in a warm place for one hour.
Chef's tip
For best results, use a well-heated cast iron pan. If you want a modern touch, you can replace the caviar with thin slices of smoked salmon. Don't forget to let the dough rest long enough to achieve that characteristic fluffy texture.
