Dough Preparation
In a large bowl or the bowl of a stand mixer, pour the lukewarm milk, add the crumbled yeast, sugar, softened butter, salt, and flour. Knead well with the dough hook until you obtain a homogeneous and elastic dough.
Sprinkle a little flour on the work surface and turn out the dough. Form a ball, cover it with a clean towel, and let it proof in a warm place for about an hour, or until it doubles in volume.
Shaping and Second Proofing
After proofing, roll the dough into a cylinder and cut it into 12 equal parts. Form small balls and place them on a baking tray lined with baking paper, leaving enough space between them.
Chef's tip
For a perfect cut, use a serrated knife or a special bread lame to avoid crushing the proofed dough.
