Preparation method
Dough Preparation
Roll out the puff pastry until it reaches a thickness of approximately 3 mm. Using a larger cutter (e.g., bear, heart, or star shape), cut out 20 identical shapes. If you are not cooking for children, you can cut the dough into equal squares to avoid scraps.
Place half of the cut-out shapes on a baking tray lined with baking paper. Set the other half aside.
Filling Preparation
For the sweet filling: Cream the butter with the sugar until you get a white foam. Incorporate the egg yolk and grated lemon zest. Add the cottage cheese and mix well. Beat the remaining egg white until stiff and gently fold it into the mixture with a spatula. Finally, add the blueberries or chopped strawberries.
Chef's tip
If you use complex shapes like bears, you will have dough scraps left over. Do not knead them again, as the puff pastry will not rise nicely. Instead, cut the scraps into small pieces, sprinkle them with your favorite spices or seeds, and bake them separately to get some delicious crispy savory crackers.
