In a large bowl, pour the buttermilk at room temperature and add the rest of the ingredients (white flour, 400g rye flour, vinegar, crumbled yeast, caraway, and salt).

Mix well, then transfer the dough to a food processor and knead for 10 minutes until it becomes homogeneous. Place the dough on a floured surface, lightly dust it with flour, cover it with a clean towel or cling film, and let it rest for 45 minutes.

Preheat the oven to 250 °C. Lightly dust a baking tray with flour.
