Preparing the onions

Roughly chop the onion. In a pan, over medium heat, sauté it in lard until golden, stirring frequently. Remove the sautéed onion onto kitchen paper towels to remove excess fat.

From the initial amount of onion, you should obtain approximately 250 g of sautéed onion, needed for the dough.

In a large bowl, pour 700 ml of lukewarm water (approximately 30 °C) and add the remaining ingredients (white flour, rye flour, yeast, vinegar, caraway, and salt). Mix well, then transfer the dough to a food processor and let it knead for 10 minutes. One minute before the end, add the sautéed onion.
