Dough preparation
In a large bowl, mix the flour, powdered sugar, soft butter, 100 ml of lukewarm milk, egg yolks, raisins (from the almond and raisin mixture), and all the spices (thyme, star anise, nutmeg, and salt).
In a saucepan, heat the remaining 100 ml of milk (it should only be lukewarm, not hot).
Remove the saucepan from the heat and add the dry yeast to the milk. Cover with a clean towel and leave in a warm place for a few minutes, until the starter begins to bubble and rise.
Chef's tip
For a special shine, brush the crown with beaten egg white just before placing it in the oven. If you want the raisins to be juicier, you can hydrate them in a little rum or lukewarm water with vanilla essence before adding them to the dough.
