Dough Preparation
Roll out the puff pastry on a work surface or use pre-rolled pastry. Beat the egg with a pinch of salt and brush the entire surface of the dough with a kitchen brush.
Lightly score the edges of the dough with a knife, about 1 cm from the border, without cutting all the way through. Sprinkle sesame seeds on these edges.
Assembly and Baking
Cut the Camembert cheese into thin slices. Peel the pears, remove the cores, and also cut them into thin slices. Arrange the cheese and pear slices alternately on the inside of the dough. Once you have covered the entire central surface, drizzle everything with maple syrup. Sprinkle with crushed pink pepper, dried cranberries, and almond slices.
Chef's tip
For an extra touch of flavor, you can serve the tart warm, alongside a glass of dry white wine or artisanal apple cider. If you want an even crispier texture, lightly toast the almond slices before sprinkling them over the tart.
