Preparation method
Preheat the oven to 200°C. From the pizza dough, cut out small circles using a glass or a round cutter. Place the circles on a baking tray lined with baking paper and bake for about 10 minutes, until lightly golden.
While the dough is baking, slice the pears thinly. In a pan, heat the maple syrup and sauté the pear slices for 1-2 minutes on each side. Add the pecan nuts to the pan towards the end to lightly caramelize them together with the pears.
Remove the mini pizza bases from the oven. On each pre-baked dough circle, place a slice of Brie cheese, a slice of caramelized pear, and a pecan nut. Return to the oven for another 5-7 minutes, until the cheese is nicely melted.
Chef's tip
For an extra touch of flavor, you can add a few fresh thyme leaves immediately after removing the mini pizzas from the oven. The sweet-and-savory combination is even more intense if the pears are well-ripened.
