Preparing the Japanese curry filling
Cut the boneless chicken thighs, potato, carrot, and yellow onion into small, uniform cubes (about 0.5 - 1 cm), ideal for a compact filling.
In a deep saucepan, melt 15 g of the 82% fat butter over medium heat. Add the onion and sauté for 3-4 minutes until translucent, then add the chicken cubes and sauté for 4-5 minutes until they change color.
Add the carrot and potato, dust with curry powder, and stir for 1 minute to release the aromas of the spices. Pour in 200 ml of hot water, the soy sauce, ketchup, and a pinch of table salt. Cover and simmer over low heat for 15 minutes, until the vegetables are very tender.
Chef's tip
The curry filling must be completely cooled before assembly; if it is warm, it will melt the dough and make sealing difficult.
You can also bake the Kare Pan in the oven at 190°C for 18-20 minutes (sprayed with a little oil), but traditional deep-frying gives them that airy, crispy crust iconic to Tokyo street food.
