Preparing the bean filling

Finely chop the yellow onion and crush the garlic cloves. Heat a tablespoon of olive oil in a large skillet over medium heat, add the onion and garlic, and sauté for 3-4 minutes until translucent and fragrant.

Drain the black beans and add them to the skillet along with the ground cumin and half a teaspoon of salt. Cook for 5 minutes, then partially mash the beans with a fork or potato masher, leaving a few whole beans for texture. Remove from heat and keep the filling warm.

Preparing and cooking the gorditas dough

In a large bowl, mix the corn flour with the remaining salt. Gradually pour in about 250-300 ml of lukewarm water and knead for 2-3 minutes until you get a smooth, pliable, non-sticky dough, similar to playdough. Divide the dough into 8 equal balls.

Chef's tip

If the dough tends to crack at the edges when flattened, add 1-2 more tablespoons of lukewarm water; proper hydration of the corn flour is the secret to a tender texture.

For a spicy kick characteristic of authentic Mexican cuisine, you can add a few chili flakes or finely chopped pickled jalapeños to the bean filling.
