O reinterpretare vegetariană irezistibilă a celebrelor kofta indiene: chifteluțe fragede din linte roșie rumenite delicat, scăldate într-un sos curry catifelat de roșii, lapte de cocos și mirodenii aromate, servite alături de orez basmati pufos.

Preparing the mixture and shaping the koftas
Rinse the lentils under cold running water and boil them in lightly salted water for about 15-20 minutes until very soft. Drain any excess liquid well and mash the lentils gently with a fork.
Finely chop the onion and garlic, and finely grate the ginger. Divide them into two equal portions: one half for the kofta mixture and the other half reserved for the sauce.
In a large bowl, mix the mashed lentils with half of the onion, garlic, and ginger, the plain flour, half a teaspoon of ground cumin, half a teaspoon of curry powder, and salt to taste. Shape the mixture into walnut-sized round koftas.
Chef's tip
For even crispier koftas, you can bake them in the oven on baking paper at 200°C for 15 minutes before adding them to the sauce.
If you prefer a spicier sauce, you can add a thinly sliced green chili pepper along with the onion and garlic.
