Preparation method
Preparing the mixture and shaping the koftas
Rinse the red lentils under cold running water and soak them in lukewarm water for 25-30 minutes, then drain them very well. Place the drained lentils in a food processor or blender along with 1 crushed garlic clove, 5 g of grated ginger, half a teaspoon of cumin, half a teaspoon of turmeric, and a pinch of salt.
Blend the mixture until you get a thick, slightly textured paste. Transfer the mixture to a bowl, add the 2 tablespoons of white wheat flour to bind, and mix well. Shape with moistened palms into walnut-sized round balls (about 12-14 pieces).
Browning the koftas
In a large, deep skillet, heat 2 tablespoons of sunflower oil over medium heat. Place the lentil koftas in the skillet and brown them carefully on all sides for 6-8 minutes, until they get a golden, browned crust. Gently remove them onto a plate and keep warm.
Chef's tip
For easier shaping of the koftas, let the lentil mixture rest in the refrigerator for 15 minutes before forming the balls.
If you prefer baking instead of frying, you can brown the koftas in the oven at 190°C on a baking sheet lined with parchment paper for 20 minutes.
