In a small pot or mug, steep the Assam black tea bag in 150 ml of boiling water for 4-5 minutes, then remove the tea bag. This infusion is the traditional secret from Amritsar that gives the chickpeas their characteristic dark brown hue and a subtle depth of flavor.
Finely chop the yellow onions. Finely grate the fresh garlic and ginger into a smooth paste. Drain and rinse the canned chickpeas with cold water.
Cook the basmati rice in salted water according to the package instructions (about 10-12 minutes) until light and fluffy, then keep covered in a warm place.

Steeping with Assam black tea is an authentic technique from Amritsar that imparts an appealing dark color to the dish and tempers the acidity of the tomatoes, rounding out the spices.
For a crisp and fresh contrast when serving, you can add a few very thin slices of raw red onion or thin ginger matchsticks on top of each portion.
