Enfrijoladas sunt un clasic irezistibil al bucătăriei stradale mexicane: lipii calde scăldate într-un sos catifelat și aromat de fasole neagră, împăturite delicat și presărate cu telemea proaspătă, smântână fină, ceapă roșie crocantă și coriandru proaspăt. O masă rapidă, hrănitoare și plină de gust.

Preparing the velvety bean sauce
Finely chop the yellow onion and crush the garlic cloves. In a large skillet, heat the olive oil over medium heat and sauté the onion and garlic for 3-4 minutes until translucent and fragrant.
Add the black beans (along with a little liquid from the can or 100 ml of warm water), ground cumin, fine table salt, and ground black pepper. Let the mixture simmer over low heat for 5 minutes.
Transfer the mixture to a blender (or use an immersion blender directly in the skillet) and blend until you get a smooth, creamy, and uniform sauce. If the sauce is too thick, thin it with 2-3 tablespoons of warm water, then pour it back into the skillet over very low heat to keep warm.
Chef's tip
For an authentic spicy Mexican touch, you can add half a fresh jalapeño pepper or a pinch of chili flakes to the bean sauce when sautéing the onion.
For extra texture and freshness, serve with a few thin slices of fresh avocado drizzled with lime juice.
